I'm not ashamed. It's true - I don't know how to cook Curry Duck.
It started off quite innocently. Just a few friends talking about 103FM's Curry Duck Lime . You would think the women were the ones talking about the cooking but no, it was the guys. Apparently this is a big deal among 'men-folk' here in Trinidad - Who could cook the best Curry Duck!
It must have been a man at 103FM who came up with this idea of making it an official competition 'down by de river'!
The debate got heated when I asked about the ingredients but up to now I don't know if it's really the length of marinating time, the coconut milk, the rum (yes, somebody said you have to add rum). It could be the shadon beni, the yoghurt or maybe it's the #1 Curry ingredient - Bay Leaf!
